CREAM CHEESE BLINTZES 
1 loaf white bread
1/2 c. butter, melted
8 oz. cream cheese
1 egg yolk
1 tsp. vanilla
1/8 c. sugar

Cut crusts off bread; roll bread with rolling pin until flat. Mix cream cheese, egg yolk, vanilla, and 1/8 cup sugar until smooth. Spread on bread; roll up. Dip in melted butter, then in mixture of 1 cup sugar and 2 tablespoons cinnamon. Bake at 350 degrees for 15-20 minutes. Yield 18-20 rolls. Delicious served with strawberries.
