BEEF TOMATO 
1 lb. sirloin, cut into thin strips
2 green peppers, cut into thin strips
1 lg. onion, cut into slices
3 stalks celery, sliced
2-3 lg. tomatoes, peeled & cut into wedges
Soy sauce & beef broth & cornstarch

Stir fry on medium heat, pepper, onion and celery. Remove from pan and set aside. Stir fry meat and add broth (about 1 cup) and soy sauce to taste. Cover and simmer for about 15 minutes.

Add cornstarch (mixed with a little broth) to thicken. Stir well and then add vegetables back into sauce. Simmer until all is again hot. Just before serving, add tomatoes, stir well. Cook until tomatoes are hot. Serve with rice or noodles.
