STRAWBERRY SAUCE
2 cups fresh strawberries, cleaned and green tops removed
4 tablespoons honey or sugar
3 teaspoons cornstarch

Mash 1 cup strawberries. Slice the remaining strawberries and set aside.

In a medium saucepan, stir mashed strawberries, honey and cornstarch together.

Heat for 5 minutes or until mixture has thickened, while constantly stirring. Do not boil. Turn heat off and add sliced strawberries. Cool.

Use over sundaes, tapioca pudding, frozen yogurt or ice cream, in banana splits, etc.

Makes about 1 cup.

Variation: Stir in a few drops (or as much as a tablespoon) of a good quality aged balsamic vinegar for a real treat! Serve with cheese and crackers.

This was really excellent. I was looking for French toast sauce. I did add the vinegar. I used frozen berry I had from the summer crop. Tonight I am going to put it on a Bundt chocolate cake. Thank you so much!!!
