BEEF, PEPPERS, AND TOMATOES 
2 lbs. boneless top round
2 tsp. sugar
1 tsp. cornstarch
1 lg. onion
1 tbsp. oil
2 tbsp. soy sauce
1 1/2 tsp. sherry
2 lg. tomatoes
1 green pepper
1/4 c. water

Slice meat across the grain into 1 x 1/16 inch slices. Make sauce of soy sauce, sugar, sherry, and cornstarch. Add to meat. Let sit at least 15 minutes. Cut tomatoes, onions, and green pepper into chunks. Heat oil and cook onions quickly over medium heat. Add meat and cook 3 minutes, stirring frequently. Add green pepper, then tomato and water. Cook 2 more minutes. Serve at once over cooked rice.
