RECIPE COLLECTION
“COLCANNON” IS IN:
NEXT RECIPE:  COLCANNON

COLCANNON 
6 large potatoes
2 or 3 cups shredded green cabbage
3 or 4 garlic cloves
1/2 stick butter
1/4 cup milk or less
salt and pepper, to taste

Cut up potatoes small for boiling and put in saucepan. Add shredded cabbage. Peel garlic cloves and add whole. Add water to cover everything. Boil until potatoes fall apart with fork and cabbage is soft. Drain out water. Add butter. Mash. Add milk as needed to smooth mixture. Add salt and pepper to taste.

Serve in a mound with butter in the center. Also good under slice meat and gravy dishes.

The colcannon I enjoyed in Scotland was much different than this although this is no doubt faster than mine mine is made from cold shredded cabbage shredded onions cold potatoes (mashed or chunked)add one beaten egg mix in bowl pour into cast iron frying pan that has been greased (lard is traditional) veg oil is OK fry slowly until brown crust is formed on bottom of mixture then place plate upside down on fry pan and invert then add more oil if needed and slide mixture carefully back into fry pan crusty side up finish crust on bottom and serve ham or bacon can be incorporated before during or after your choice I also like 2 eggs sunny side up on top of my colcannon. Wonderful stuff.

Oh Robert, I do like your idea. Although half Scot, I didn't know that side of the family and have been exploring those roots for several years through food and mythology. I'll most definitely try your method. Thanks :)

This is a great twist on mashed potatoes. The flavor is mild and slightly tangy. I have pg-related heartburn, but this dish is substantial and easy on my system. You can eat it as is, with cheese, or any add-ins that seem appropriate (I added hotdogs at one point and it was still great).
