Instant Mashed Potatoes for six 1 pound bagged angel hair cabbage or cole slaw 3 small leeks, green and white parts 1 cup milk or 1/2 cup milk and 1/2 cup light cream 3/4 tsp mace 1 stick unsalted butter + 3 tbsp Salt and pepper to taste Prepare instant mashed potatoes according to box directions and turn them into the bowl of stand mixer. Add mace, mix again. Boil bagged cabbage or cole slaw (discarding dressing if using cole slaw) until soft. Thinly slice leeks (a mandoline is great for this) into a sauce pan and add milk and 1 stick of butter. Gently boil leeks about 10 minutes. Drain cabbage or cole slaw well. Combine all ingredients in mixer bowl. Using a wire whip blend thoroughly. Check consistency. It should be thick but not very stiff. Add more potato flakes if needed. Add salt and pepper and adjust seasonings. Whip one last time. Fold into a 2 qt. casserole. Bake uncovered at 350 until heated through and top begins to brown. About 20-30 minutes.
