MANICOTTI/STUFF-A-RONI 
Nee d one box of manicotti noodles, boiled until soft, DO NOT over cook.

MEAT FILLING:

1 lb. ground beef
1 med. onion, minced
1/2 c. soft bread crumbs
1 (15 oz.) can spinach, drained & chopped (or 10 oz. frozen)
3 eggs, slightly beaten
1 1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. grated Parmesan cheese

Brown beef and onion. Blend together meat, spinach and remaining ingredients.

SAUCE: Use 1 (15 oz.) can of spaghetti sauce or 4 cups of your own sauce.

Cover bottom of 2 quart baking dish with 1 cup sauce. Fill cooked noodles with meat filling. Any left over filling can be blended into sauce.

Arrange filled noodles in single layer in baking dish. Leave space between each Manicotti noodle to allow for expansion during baking. Completely cover with remaining sauce. Add 1/2 cup water. Cover with grated mozzarella cheese.

Cover baking dish with aluminum foil (I spray with Pam to avoid cheese from sticking to foil) and bake at 350 degrees for an hour.
