FROSTY CUCUMBER SALAD | |
1 pkg. lime gelatin (3 oz.) 1 c. boiling water 1/2 med. sized cucumber (thinly sliced) 1/2 c. grated cucumber 3/4 tsp. salt 2 tbsp. vinegar 1 tbsp. chopped scallions 1/2 c. mayonnaise Dissolve gelatin in boiling water. Chill until slightly thickened. Meanwhile, overlay cucumber slices in bottom of 8 inch square pan. Stir remaining ingredients into chilled gelatin. Set gelatin bowl firmly in ice and whip with rotary beater until light and fluffy. Pile whipped gelatin on top of cucumber slices. Chill until firm. Serves 9. |
