BANANA CARAMEL BARS 
2 1/2 c. all-purpose flour
1 c. sugar
1 tsp. baking powder
1 c. butter, cubed
1 lg. egg, beaten
2 extra-ripe bananas, peeled
1/2 c. caramel topping

TO MAKE CRUST: Combine flour, sugar and baking powder in a bowl. Cut in butter with a pastry blender until mixture resembles coarse meal. Slowly stir in egg, mixing with a fork until crumbly. Pat half of mixture in a 13x9 inch baking pan to form crust.

TO MAKE FILLING: Mash bananas (1 cup). Blend bananas with caramel topping. Pour over crust, spreading evenly.

Sprinkle remaining crust mixture over filling. Pat gently. Bake in a 375 degree oven for 35 minutes, or until golden brown. Cool on wire rack. Cut into bars when cooled.

Makes 24 bars.

Didn't have all purpose flour had self rising and the cookies are like cake. The cookies still taste good and will be good with a warm beverage. I will make again!
