CHICKEN CARUSO AND RICE 
2-3 lbs. chicken cooked, boned, and cut into chunks
Garlic powder, salt, and pepper to taste
1 (15 oz.) spaghetti sauce
Italian seasoning
2 c. diced celery
3 tbsp. butter
3 c. cooked rice
Parmesan cheese

Season chicken. Saute in butter with salt and pepper about 2 minutes. Stir in spaghetti sauce and 1 teaspoon Italian seasoning. Cover and simmer.

Cook celery in microwave for about 5 minutes, then add to chicken mixture and simmer a few more minutes. Serve over rice. Top with Parmesan cheese.

Since microwave ovens vary in power, you may need to adjust your cooking time.
