SAVORY ITALIAN RICE BAKE 
1 (6.9 oz.) pkg. chicken flavor rice-a-roni
3/4 lb. Italian sausage
1/2 c. chopped onion
2 sm. zucchini, cut in 1/4 inch slices
1 clove garlic, minced
2 c. spaghetti sauce
1/2 tsp. dried, crushed basil
1 1/2 c. shredded Mozzarella cheese

Preheat oven to 350 degrees. Prepare rice-a-roni according to package instructions. Remove sausage from casing, crumble and brown in skillet with onion. Remove sausage and onion mixture from skillet and set aside. Drain all but 1 tablespoon of dripping from pan. Add zucchini and garlic to pan and saute over medium heat for 1 minute.

Cover and continue cooking over low heat for about 2 more minutes. Combine rice, sausage mixture, 1 cup spaghetti sauce and basil; spread into 11 x 7 inch baking dish. Sprinkle with 1/2 cup cheese. Top with zucchini. Pour over remaining sauce, then sprinkle with remaining cheese. Bake 25 to 30 minutes or until heated through; let stand 5 minutes before serving.
