BRANDI'S HOMEMADE MAC AND CHEESE
1/2 (16 oz.) pkg. macaroni pasta noodles

CHEESE SAUCE:

2 cups sharp cheddar cheese (shredded)
3 tbsp. butter
3 tbsp. all-purpose flour
2 cups milk
1 tsp. prepared mustard (spicy or regular)
salt and pepper, to taste

TOPPING:

1 tbsp. butter
1/3 cup Italian style bread crumbs (Progresso or 4C)

Boil water and cook pasta until "al denté" (still a little crunch to them).

In a saucepan melt 3 tablespoons of butter then add flour. Stir and let cook for about 3 minutes. Add milk and mustard then season with salt and pepper, to taste. Stir constantly while bringing to a boil over medium-high heat and continue to cook until thickened and creamy (not quite gravy).

When consistency is reached remove from heat and stir in shredded cheese until melted.

Pour your cooked and drained pasta in a 8 or 9-inch round or square casserole dish. Top with cheese sauce and mix well.

Melt 1 tablespoon of butter in microwave and then add bread crumbs. Sprinkle mixture on top and then bake at 350°F for 25 minutes.

If needed brown topping under broiler for a few minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Seriously good comfort food. I used regular cheddar since that's what I had on hand, but next time I'll definitely spring for extra sharp! I might add an extra 1/4 cup or so of milk to make the sauce super creamy. Thanks for submitting!
