CHICKEN CARUSO AND RICE 
2 whole boneless chicken breasts (1 1/2 lbs.), cut into thin strips
Garlic salt and pepper
3 tbsp. butter
1 (15 1/2 oz.) jar spaghetti sauce (2 c.) or homemade
1 tsp. Italian seasoning or 1/2 tsp. each oregano, basil, garlic powder
2 c. sliced celery
3 c. hot cooked rice

Season chicken with garlic salt and pepper. Saute in butter about 2 minutes. Stir in sauce and seasonings; cover and simmer 10 minutes. Add celery, continue to cook until celery is tender crisp. Serve over rice; sprinkle grated cheese if preferred.

NOTE: If homemade sauce used herbs for seasoning, then the extra can be omitted.
