1 sm. head cauliflower
1/4 c. mayonnaise
1 tsp. Dijon mustard
3 drops Tabasco
1/4 c. shredded Cheddar cheese

Clean and trim head of cauliflower by taking out some of the stem but keeping the head whole. Place the head of cauliflower in a dish covered with plastic wrap. Microwave for 7 minutes or until it is tender to a knife inserted to stem area. Keep covered until ready to serve.

Mix Tabasco, mayonnaise and mustard. Cover top of cauliflower with mixture and sprinkle with cheese. Microwave on high for 1 1/2 minutes. Serve.
