CREAMY CAULIFLOWER | |
2 pkgs. (10 oz.) frozen cauliflower 1 tbsp. butter 1 tbsp. flour 1/2 c. milk 1 c. sm. curd cottage cheese 1/2 c. shredded cheddar cheese 1/2 tsp. salt 1 tbsp. pimento, chopped 1/2 c. crushed corn flakes 1/2 tsp. paprika 1/2 tsp. dill weed In 2 quart casserole put 1/2 teaspoon salt, 2 tablespoons water and 2 packages (10 ounces) frozen cauliflower. Microwave at high 5 to 7 minutes. Drain. In same 2 quart casserole stir 1 tablespoon butter (softened), 1 tablespoon flour. Stir in 1/2 cup milk, 1 cup small curd cottage cheese, 1/2 cup shredded cheddar cheese, 1 tablespoon chopped pimento, 1/2 teaspoon salt, 1/8 teaspoon pepper. Microwave at high 6 minutes, stirring after 3 minutes until cheese melts and mixture thickens. Mix cauliflower gently into sauce and sprinkle top with 1/2 cup crushed corn flakes, 1/2 teaspoon paprika and 1/2 teaspoon dill weed. Microwave on high for 5 to 6 minutes. |
