MOLASSES COOKIES | |
2/3 c. vegetable oil 1 c. sugar 1 egg 1/4 c. molasses 2 c. flour (plain) 1/2 tsp. salt 1 1/2 tsp. baking soda 1 tsp. ground cinnamon 1 tsp. ground ginger 1/4 c. sugar Mix oil and 1 cup sugar in large mixing bowl. Add egg and beat well. Stir in molasses. Combine flour, salt, soda, cinnamon and ginger (sift together). Add to molasses mixture, stirring to mix. Roll dough into 1" balls; roll each in remaining 1/4 cup sugar. Place 2" apart on greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes or until lightly brown. Remove from pan to cool on rack. Makes 3 1/2 to 4 dozen cookies. These are real good served with cold apple cider. |
