1 med. size cucumber
1/4 c. cider vinegar
1 tbsp. water
2 tbsp. sugar
1/4 tsp. salt
1/16 tsp. pepper
2 tbsp. minced parsley

Mix all ingredients except cucumber. Dice cucumber and add to mixture. Ready to serve or chill.
