FRESH CUCUMBER RELISH 
1 carrot, sliced
1/2 onion, sliced
2 lg. cucumbers, cubed
1/4 c. vinegar
2 tsp. salt
3/4 tsp. dill seed

Chop carrot and onion, turn into glass or plastic refrigerator dish. Chop cucumber with vinegar and seasonings; pour into refrigerator dish and mix. Chill thoroughly. Makes about 2 cups.
