NO-CRUST RICE PIE 
1 qt. milk
2 doz. eggs
1 can crushed pineapple
1 tbsp. vanilla
1 lb. ricotta cheese
Pinch salt
Dash cinnamon
1 lb. rice
2 1/2 c. sugar

Combine all ingredients and put into two large pie plates, greased and lightly sprinkled with flour. Bake in 375-400 degree oven for 1 1/2 hours.
