RICE CRUST QUICHE PIE 
2 c. cooked rice
1 egg
3 tbsp. grated cheese
4 eggs
1/2 c. skim milk
1 can diced or whole shrimp
2 c. shredded cheese
1/2 c. broccoli
Pinch of crushed pepper
Dash of salt

In bowl mix rice, 3 tablespoons grated cheese and 1 egg. Put mixture into a deep dish pie crust pan, spreading around for crust. Bake at 350 degrees for 5 minutes. Remove from the oven. Cool before putting mixture in it.

In a bowl mix 4 eggs, skim milk, shrimp, cheese, broccoli, pepper and salt. Put mixture in crust. Bake at 350 degrees for 45 minutes. Test center with knife. Let set for 10 minutes before serving.

Can substitute for the 2 cups shredded cheese - 1 cup of cheese + 1 cup of cottage cheese.

If desired last 10 minutes of baking, spread more cheese on top.
