POLISH SAUSAGE RICE `N CHEESE
CASSEROLE
 
1 lb. pkg. Polish sausage
1/4 c. chopped onions
1/4 c. bell peppers
1 can cream of mushroom soup
1 (6 oz.) box wild rice
1/2 c. shredded Cheddar cheese
1/4 c. water

Cut sausage into bite-size chunks. Brown in skillet with onions and peppers; drain. Cook rice according to directions on box. Mix sausage with rice and soup; add 1/4 cup water. Place in casserole dish and bake for 30 minutes at 350 degrees. Top with cheese and return to oven for cheese to melt.

Delicious! I didn't have cream of mushroom so ended up using a potato soup since it was the only creamy one I had on hand (skipped the water) and it still turned out well. I used a colby/cheddar mix too for the top, the cheese is really a great addition... Thanks for the recipe!

So WONDERFUL to have a polish sausage casserole recipe that DOESN'T include potatoes. Delicious. I left off the cheese because a family member cannot have it. Still great!
