OFF BEAT CARROTS WITH
HORSERADISH
 
6 med. carrots - pared and sliced
1/2 c. mayonnaise
2 tbsp. horseradish
2 tbsp. grated onion
1/2 tsp. salt and pepper
1/2 c. buttered bread crumbs

Cook carrots until tender - drain and place in 1 quart baking dish. Combine mayonnaise, horseradish, onion, salt and pepper. Place on carrots, top with crumbs.

Bake about 15 minutes at 350°F.

Since this is like the recipe my Mother Zenovia Pukeij Courtney has been using since the 1950s I believe she created this dish, we call Mom's Zesty Low Cost Carrots. Can substitute brown spicey mustard & dash of lemon for horseradish & cracker crumbs instead of bread. Do NOT overboil carrots or they turn to mush. 20 minutes max.
