PLANTATION CARROTS 
6 to 8 carrots, cut lengthwise
1/4 c. water or liquid from carrots
1 tbsp. onion, minced
2 tsp. cream style horseradish
1/2 c. mayonnaise
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. bread crumbs
1 tbsp. butter
Dash of paprika

Cook the carrots and spread in a shallow baking dish. Mix water, onion, horseradish, mayonnaise, salt and pepper together; pour over carrots. Top with bread crumbs, butter and paprika. Bake at 375°F for 15 to 20 minutes.

I've been making this recipe for about 15 years; maybe more. A friend turned me on to it and I've made it ever since tasting it at her house. It's GREAT with ham! (When my friend is making a ham and inviting the family over, the first thing her brother asks is if she's making "those carrots".) They're really good! Who normally gets excited about carrots, right? It would also be nice with roast beef or anything you'd normally have with carrots on the side. The horseradish gives it just the right little kick. It's super-easy to make, too.
