POTATO PUREE (Aligot) | |
2 lb. potatoes, perferably old 2 tbsp. heavy cream 1/4 tsp. salt 1/8 tsp. pepper 2 tbsp. butter 2 lg. cloves garlic, minced 6 oz. Brie or Camembert with rind removed, sliced Chopped chives or green onion 1. Cook potatoes in boiling salted water to cover in large saucepan for 20 minutes or until tender. Drain; peel. Mash the potatoes with the heavy cream in a large bowl. Season with salt and pepper. 2. Meanwhile, melt the butter in a small saucepan. Saute the garlic in the butter for 1 minute. Add the Brie; stir until completely melted. 3. Stir the melted cheese mixture into the mashed potatoes; garnish with the chopped chives. Serve immediately. |
