“MASHED SWEET POTATOES” IS IN:

MASHED SWEET POTATOES 
4 medium sized sweet potatoes
1 cup half and half
1 stick butter
1/4 cup pure maple syrup (or to your taste)
sea salt, to taste
1/2 tsp. freshly ground black pepper

Wash, peel, and cut potatoes into 2 inch cubes.

Boil or steam potatoes over water until potatoes are fork tender (about 20-30 minutes). Drain.

In microwave, melt butter. Stir in half and half and maple syrup.

Combine butter mixture with potatoes while still hot; mash until smooth. Season to taste with salt and pepper.

Serve using an ice cream scoop.

Makes 6-8 servings.
