RED BEANS AND RICE WITH SAUSAGE 
1 lb. red beans
3 qts. water
Ham hock
1 tbsp. salt
1 1/2 c. chopped onion
1 1/2 c. chopped celery
2 cloves minced garlic
1/2 tsp. Tabasco
1 tbsp. chopped parsley
1 1/2 c. rice
3 c. boiling water
1 lb. sausage (Italian or turkey)
1/2 tsp. each: cloves, & allspice
2 bay leaves

Thoroughly wash and drain beans. In a large pot, mix beans, water, ham hock, salt, onion, celery and garlic. Add spices. Bring to boil and simmer 3 1/2 to 4 hours until beans are creamy. Fifteen minutes before serving, add 1/2 teaspoon Tabasco. Garnish with fresh parsley. Serve over rice.

RICE: Slowly, without stopping the boil, sprinkle the rice in 3 cups boiling water. Add salt. Boil gently WITHOUT STIRRING about 20 minutes (until grain of rice pinched in fingers is soft). Rinse in colander under cold water until ready to use.

SAUSAGE: Can e either microwaved, baked or fried, depending on your choice. Cut into serving pieces or lay in one piece over beans before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
