RED BEANS AND SAUSAGE WITH RICE 
1 lb. steamed rice
2 lbs. red beans
2 lbs. smoked sausage links, cut in half lengthwise
1 sprig of bay leaf
1 ham bone, if not available use 1 lb. salt pork
1 gallon of water
1 tsp. fresh ground black pepper
Salt to taste

Bring water to a boil, adding all seasonings. Add beans; let it cook until tender. Add sausages and let it simmer for 30 minutes. The beans must be at the consistency where the beans are partially over cooked (creamy). When ready, serve a mound of rice on the center of a bowl plate. Add beans around the rice, and add 2 pieces of sausage around the rice on top of the beans. Cornbread goes well with this dish.
