RED BEANS AND SAUSAGE 
1 lb. pinto beans
1 lb. Owen sausage
2 med. onions
1 bunch green onions
1 1/2 tbsp. parsley
1 green pepper
2 lg. pods garlic, chopped
1/2 lb. salt pork
1 (4 oz.) can tomato sauce
1 tbsp. Worcestershire sauce
1/2 tsp. oregano
1/4 tsp. thyme
3 dashes Tabasco
1 tsp. red pepper
1 tsp. black pepper
1 tbsp. salt
1 tbsp. chili powder

Soak beans overnight. Cook beans and pork in salted water slowly for 45 minutes. Add vegetables, seasonings and tomato sauce. Cook slowly another hour, stirring occasionally.

Make 8-10 patties out of sausage. Leave whole or quarter. Add sausage and cook 45 minutes more. Cool, not necessarily refrigerate. Reheat and bring to a boil, then lower heat and simmer gently 30 to 40 minutes. Serve over rice.
