SHIRLEY'S BREAKFAST CASSEROLE 
1 pkg. tater tots
Shredded Monterey Jack cheese
Shredded Cheddar cheese
10 eggs
1 can (or fresh) mushrooms
1 med. onion, chopped
1 bell pepper, chopped
1 pkg miniature smoked sliced sausage
1 can olives, sliced
Garlic salt and pepper to taste

Put layer of tater tots on bottom of 9 x 12 inch lightly greased dish. Top with cheeses. Mix together eggs, mushrooms, onions, bell pepper, sausage, olives, and spices. Pour 1/2 of mixture over tater tots. Add another layer of tater tots, then remaining mixture. Bake at 350 degrees for 45 minutes. Top with cheeses during last 10 minutes of baking.

Great overall recipe! I used ground beef instead of sausage. Browned beef with onion and fresh garlic. Worked like a charm. Used frozen tater tots. Very easy and delicious.
