RED BEANS & RICE 
3 cans (lb.) red beans
1/4 c. onion, chopped
1 clove garlic, chopped
1 bay leaf
1/4 tsp. Tabasco
1 lb. smoked sausage, cut into 1 inch pieces
1/2 tsp. salt
1/2 tsp. black pepper
2 strips uncooked bacon, cut into 1 inch pieces
2 tbsp. Worcestershire sauce
Pinch of thyme
6 c. hot cooked rice

Place all ingredients except rice and sausage in pot. Bring to a boil, reduce heat and simmer, covered, 2 hours. Add sausage last 30 minutes. Serve over rice. Serves 6 to 8.
