RED BEANS, RICE AND SAUSAGE 
2 lbs. dry red beans, rinsed & sorted
1/4 c. bacon drippings
2 lg. onions, chopped
1 lg. bell pepper, chopped
4 lg. garlic cloves, minced
1/4 c. chili powder
1 pkg. taco seasoning
1/2 tsp. dried marjoram
1 1/2 c. chopped celery
2 bay leaves
1 tsp. thyme leaves, crushed
2 lbs. hot bulk sausage
2 lbs. ground beef
12 green onions, chopped
1/2 c. minced parsley
2 tbsp. sugar
Salt, pepper & cayenne to taste

Heat drippings in large Dutch oven. When hot, add onions, bell pepper, garlic, and celery. Saute until wet in drippings. Add beans, salt, pepper, cayenne, marjoram, bay leaves, sugar and enough water to cover. Bring to a boil. Reduce heat and simmer until beans are soft, about 3 hours. Add water as needed to keep covered. Stir occasionally. Discard bay leaves. Cook ground beef, sausage, brown and drain. Mix with other. Serve with rice in it or serve over rice.
