KIELBASA WITH CABBAGE AND BEANS | |
1/2 c. olive oil 2 to 3 garlic cloves, minced 1 sm. onion, chopped 2 tbsp. tomato paste 2 c. cooked white navy beans 1/4 c. minced parsley 1/4 c. white wine 2 lbs. cabbage, mixed and sliced (savory and red) 1 tsp. caraway seed 1 lb. kielbasa, sliced Cook beans in boiling water for one hour. In large skillet, saute garlic and onion in oil until translucent. Add meat and brown. In casserole pan combine beans, cabbage, caraway, parsley. Dilute tomato paste with wine and pour over mixture. Add meat and toss lightly. Cover with foil and bake at 350 degrees for 45 minutes until cabbage is tender. Serve with crusty Italian bread. Serves 8. |
