CHINESE BEEF, BEAN SPROUTS AND
BROCCOLI
 
1 lb. flank or round steak
1/4 cup soy sauce
1 tbsp. cornstarch
1 tbsp. dry sherry
1 tsp. sugar
1 clove garlic
1/2 bunch broccoli
1 1/2 cups fresh bean sprouts
5 tbsp. vegetable oil
1 slice ginger root
1/4 cup sliced green onion

Cut beef across grain, 1/4 inch slices, 1 inch long. Mix beef with next 5 ingredients and set aside. Cut broccoli tops into flowerets, 1 to 2 inches longer, 1/2 inch thick. Put 2 tablespoons oil in hot skillet, high heat. Add broccoli and bean sprouts and stir-fry 2 minutes; remove and keep warm. Add remaining oil to skillet, then add ginger root.

Stir in beef mixture and stir-fry 2 minutes or until almost done. Add broccoli and bean sprouts and mix lightly. Serve at once with boiled white rice and/or dry Chinese noodles.

Serves 4.
