CHINESE BEEF BROCCOLI 
1 lb. flank steak
1/4 c. soy sauce
1/4 c. dry sherry
1 tsp. ginger root
1 tsp. sugar
1 tsp. minced garlic
2 tsp. cornstarch
1/4 c. water
2 med. onions
1 bunch broccoli
1/2 c. oil

Cut meat in pieces 1 1/2 inches long by 1/4 inch thick. Combine soy sauce, sherry, ginger, sugar, garlic, cornstarch and water. Mix well. Add meat to marinade and let stand 1 hour.

Place 1/4 cup oil in pan and cook onions and broccoli for 1 minute, remove from pan and dry pan. Cook drained meat in 1/4 cup oil until brown (1 minute). Add juice until thickened. Add vegetables. Serve over rice.
