CHINESE BEEF WITH BROCCOLI 
2 tsp. cornstarch
1/2 tsp. sugar
3 tsp. water
1/2 tsp. ginger
2 tbsp. soy sauce

Cut 1 lb. flank steak in 1/4 inch diagonal pieces. Marinate 2 hours in this mixture.

Prepare: 1 c. bamboo shoots, rinse 1/2 c. sliced mushrooms

Stir fry beef until it loses red color in 2 tablespoons of oil (about 1 minute). Remove from pan.

Stir fry broccoli, bamboo shoots and mushrooms in 3 tablespoons oil for 2 minutes. Add 1 1/2 teaspoons salt, 3/4 teaspoon sugar, 2 tablespoons water and cook 1 minute. Add meat and cook 1 minute. Add 1 teaspoon cornstarch blended with 1 tablespoon water. Cook until thickened. Serve over bed of rice. Serves 6.
