SQUASH CASSEROLE 
1 pkg. Jiffy corn muffin mix
1 egg
1/2 c. milk
1 c. grated yellow squash or zucchini
1 sm. onion, chopped
1/2 c. grated Cheddar or American cheese

Mix all ingredients, pour into buttered casserole. Bake as on box or microwave, stirring every 3 minutes until done.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This was very good and got rave reviews from my dinner guests. I also cut off the corn from an ear of corn and added that along with some extra cheese--probably ended up using closer to a cup. Chopped up fresh parsely and mixed that in too. This is a corn pudding/spoonbread rather than corn bread. But it's delicious!
