ONION CHEESE PIE 
4 c. thinly sliced onion
1 tbsp. butter
1/2 lb. (2 c.) shredded Cheddar cheese
3 eggs
2/3 c. half and half or canned evaporated milk
1 tsp. salt
1/4 tsp. pepper
6 tomato slices, if desired
1 pie shell with high fluted edges

Saute onions in butter, until onion is soft and golden in color. Spread alternate layers onions and cheese in pie shell, ending with cheese. Combine eggs, milk, salt and pepper, beating well. Pour over onions and cheese. Bake at 400 degrees about 30 minutes. Before done, add tomato slices if desired. Serves 6.
