CHEESE 'N SAUSAGE STRATA 
1/2 lb. bulk sausage
3/4 c. fresh mushrooms
1/4 c. onion
Green pepper (if desired)
1/2 lb. Velveeta cheese, cubed
4 c. bread cubes
1 c. milk
4 eggs, beaten

Brown sausage, drain. Add vegetables and cook 5 minutes more. Stir sausage mixture, Velveeta and bread cubes together. Place in greased 8 inch square pan (dish). Beat eggs and milk and pour over dish. Cover and refrigerate several hours. Bake uncovered at 350 degrees for 50-55 minutes. Let stand 10 minutes before serving.
