WILD RICE AND ARTICHOKE SALAD 
1 (6 oz.) pkg. long grain and wild rice
1 (14 1/2 oz.) jar marinated artichoke hearts
1 c. frozen peas
1 1/2 c. cherry tomatoes, halved
3 scallions, sliced
1/4 c. Italian dressing
1/4 c. chopped fresh parsley

Cook rice according to package. Cool. Combine with rest of ingredients. Mix well. Serves 6 people.
