ARTICHOKE RICE SALAD 
1 (6 to 7 oz.) pkg. chicken flavored rice mix
2 chopped green scallions
2 jars (6 oz. each) marinated artichoke hearts
1/2 to 1 tsp. curry powder
1/3 c. mayonnaise

Cook rice as directed on package but omit butter. Turn into a bowl and let stand until cooled to room temperature. Add scallions. Drain artichokes and reserve marinade. Combine marinade with curry and mayonnaise. Add this dressing to artichokes and rice. Mix lightly. Chill covered and garnish with tomato wedges, if desired. Serves 6 to 8.
