ARTICHOKE-RICE SALAD 
1 pkg. chicken Rice-A-Roni, cooked according to pkg. directions
3 green onion, chopped
1/4 c. red bell pepper, diced
1/4 c. green bell pepper, diced
1 can water chestnuts, chopped, or 3/4 c. jicama, diced into 1/2 inch pieces
1/4 c. peanuts, chopped
2 (6 oz.) jars marinated artichokes

DRESSING:

Juice from the 2 jars artichokes
1/4 c. mayonnaise
1/2 tsp. dry mustard
1/2 tsp. curry powder
3 tbsp. lemon juice
Salt and pepper to taste

Mix dressing ingredients; add to rice mixture, season to taste. Best if made the day before serving. Also good with chicken or turkey pieces added.
