ROAST LOIN OF PORK WITH
SAUERKRAUT
 
Prepare pork in large roasting pan seasoned with caraway seeds. Add water to bottom of pan, just enough to cover pan.

Bake at 350°F for 30 minutes per pound. About 1 hour before roast is done, add quartered, peeled potatoes to pan. Continue baking, stirring potatoes in gravy occasionally.

In frying pan at low heat, melt 1/2 stick of butter. Add 1 tablespoon of flour, stir together until slightly browned. Add:

1 1/2 tsp. caraway seeds
3 tbsp. applesauce
1 package cryovac or bottled sauerkraut (as much as you like)

Mix together and simmer 10 to 15 minutes before serving.
