MAINE BAKED BEANS | |
1 lb. dry beans (red, kidney, yellow eye or pea beans) 1/4 lb. salt pork 1/4 - 1/2 c. brown sugar Slightly less than 1/4 c. molasses 1 tsp. dry mustard 1 1/2 tsp. salt 1/2 tsp. pepper Pick over beans and soak overnight in cold water. In morning, parboil until skins crack when blown upon. Beans may then be put in bean pot and cooked in oven or in bean pot and cooked on top of the stove. Mix rest of ingredients, putting salt pork on top. Add water to reach top of beans. Simmer slowly until beans are done, adding water as necessary or bake in bean pot 6 hours at 300 degrees, also adding water as necessary. May be served with cole slaw, hot dogs, biscuits or Boston Brown Bread. |
