OLD FASHIONED BAKED BEANS | |
1 lb. sm. white beans, dry 10 c. water 1 1/2 tsp. salt 1 tsp. dry mustard 1/2 tsp. freshly ground black pepper Dash of hot pepper or pepper sauce 1/2 c. onion, chopped 1/4 c. molasses or honey 1/4 c. brown sugar 1/4 c. cider vinegar 1/4 lb. salt pork, cubed 1 qt. boiling water Soak beans overnight in 10 cups of water or bring water and beans to boiling and let boil 2 minutes. Remove from heat, cover and set aside for at least 1 hour. Drain beans, combine salt, mustard, black pepper and hot pepper, if using. Mix into beans. Add hot pepper sauce, if that's your choice, onion, molasses, brown sugar and vinegar. Put half of bean mixture into a 1 1/2 to 2 quart baking dish or bean pot. Add 1/2 the pork, then rest of the beans. Top with remaining pork, pour in boiling water to top of beans, top with remaining pork, pour in boiling water to top of beans. Cover, bake at 300 degrees for 6 hours, if to be served at once, 5 hours if to be frozen, add boiling water if needed during baking. Makes 10 servings. |
