ALLISON'S TACO LASAGNA
2 lb. ground beef
1 large onion, chopped
2 (10 oz. ea.) cans Rotel diced tomatoes with green chilies
2 env. taco seasoning
1 (8 oz.) tub dairy sour cream (I use light)
1 (15 oz.) can refried beans
1 (16 oz.) pkg. Mexican "fiesta" blend cheese
6 extra large flour tortillas

SUGGESTED TOPPINGS:

1 bag Tostitos
taco sauce (I use Taco Bell mild)
diced onion
chopped lettuce

Preheat oven to 350°F. Brown ground beef in a pan (follow directions on back of the taco seasoning package).

Simmer off water then add both cans of Rotel diced tomatoes, refried beans and dairy sour cream (makes it a little more workable when spreading it out).

In a 9x13-inch glass baking dish cut tortillas to fit dish. Layer tortillas, meat, cheese. Repeat until dish is full.

Cover with aluminum foil and bake at 350°F for 20 to 25 minutes. Let stand for 5 minutes to cool.

Top with chips, taco sauce, onion and lettuce.

I love the combination of Rotel and refried beans. I used a low-fat dairy sour cream and cheese to lighten things up a bit. Thank you for sharing!!
