PERFECT ROAST BEEF 
3 lb. roast beef

Salt and pepper the roast beef. Raise oven temperature to 500°F.

Roast, uncovered, for 15 minutes (or about five minutes per pound if your roast weighs more.) Turn off the oven, but DO NOT OPEN THE DOOR FOR TWO HOURS. This works well with a 3 pound size roast.

Cook time didn't work for me. After the 2 hour period, roast didn't come close to minimum temperature. I turned oven back on to 350 for 30 minutes to get it to 145 degrees. Roast was juicy and delicious. Perhaps timing is different for gas stove??? Also, we are at high altitude (6300 ft above sea level). Could altitude make a difference? Anyway, my modification created a tasty meal.

Made this recipe too many times to count and it comes out perfect every time. We are from Buffalo, NY and my family loves Roast Beef on Weck sandwiches This method works perfectly. Dip medium/rare beef in Au Jus, add horse radish with kimmelweck roll. Delicious!
