ITALIAN MUSHROOMS 
1 lb. fresh mushrooms
1 med. lemon
1/2 - 3/4 stick of butter
1 or 2 tsp. soy sauce
1 tsp. basil
1/2 tsp. salt
1/4 tsp. sugar
1/2 - 1 tsp. thyme (opt.)
1/8 c. water or less (taste juices to judge)

Rinse mushrooms under running water; trim rough stem ends. Melt butter in large wide skillet so that you have one layer of mushrooms (a saucepan does not work for this recipe). Add mushrooms, juice of lemon, soy sauce, basil, salt, sugar, thyme and water. Cook, stirring often until mushrooms are well coated, juices are cooked down and mushrooms are tender (at least 30 minutes). Serve immediately. Great with steak!
