STUFFED ITALIAN MUSHROOMS 
Saute chopped up mushroom stems, 1 big onion, 2-3 stalks of celery (chopped up very fine) in 1/2 stick butter. Add 4-5 slices of bread, crumbled, 2 tablespoons Parmesan or Romano cheese, salt and pepper, parsley and Italian seasoning. Stuff large mushrooms and place in baking dish. Add 1 cup of tomatoes and sprinkle with Parmesan cheese.

Bake at 350 degrees for 30-45 minutes. Note: Don't add any more than 1 cup of tomatoes. It gets too mushy and sloppy.
