MICROWAVE BREAD PUDDING 
4 slices bread
1/4 c. raisins
3 eggs
1/2 c. brown sugar
1 tsp. vanilla
Dash of salt
2 c. milk
2 tbsp. butter
Cinnamon or nutmeg

In ungreased round micro-safe dish, mix bread and raisins. Beat eggs, sugar, vanilla and salt until well blended. Heat milk and butter on High (maximum power) 4 1/2 minutes or until steaming hot. Gradually stir in egg mixture. Pour over bread and raisins. Sprinkle with cinnamon and/or nutmeg. Cover top with wax paper, (cook on 50%, 1/2 power) 12 to 14 minutes. Rotate dish 2 times during cooking. When cooked center may be soft, but will firm as pudding cools. Use cake tester to check. You may add 1 apple, sliced thin if desired to bread mixture. Serve with whipped cream or Cool Whip.

Since microwave ovens vary in power, you may need to adjust your cooking time.
