MICROWAVE BASIC BREAD PUDDING 
4 c. bread cubes, lightly packed into cup (4 to 5 slices)
1/2 c. brown sugar, packed
1/4 tsp. salt
2 c. milk
1/4 c. butter
2 eggs
1/2 tsp. vanilla (optional)
1/2 tsp. cinnamon (optional)
1/2 c. raisins (optional)

Spread bread cubes evenly in an 8 inch round dish. If using raisins, sprinkle them evenly. Then sprinkle evenly with brown sugar and salt. Measure milk into 1 quart measuring cup. Add butter. Place cup in microwave oven. Cook at High for 2 minutes, just until butter is melted and milk is slightly warm. Rapidly stir in eggs with a fork, and mix well. Pour over bread cubes in dish. Place dish in microwave oven. Set at medium/defrost. Cook 9 to 12 minutes, giving dish 1/2 turn after 5 minutes. When cooked, center may still be slightly soft but will set up as you should let it stand a few minutes. Serve warm or cold.

Since microwave ovens vary in power, you may need to adjust your cooking time.
